Fluffer Nutter Brownie Bites Recipe




INGREDIENTS:



for the brownies
  • ½ cup plus 2 tablespoons all-purpose flour
  • ½ teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • 5 ounces dark chocolate, chopped
  • ½ cup earth balance (or butter)
  • ½ teaspoon instant espresso powder
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 large eggs
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
for the marshmallow frosting
  • ¼ cup earth balance (or butter), softened
  • ½ cup marshmallow fluff
  • ½ teaspoon vanilla extract
  • 1 cup powdered sugar
for the peanut butter frosting
  • 6 tablespoons earth balance (or butter), softened
  • ¼ cup creamy peanut butter
  • ½ tablespoon vanilla extract
  • 1 cup powdered sugar
  • 1-2 tablespoons almond milk


INSTRUCTIONS:


to make the brownies
  1. preheat the oven to 350 degrees F and line an 8x8-inch baking pan with parchment paper.
  2. in a small bowl, combine the flour, salt, and cocoa powder. set aside.
  3. put the dark chocolate, earth balance, and espresso powder in a large bowl. microwave the bowl in 30-second intervals, stirring between each interval, until the mixture is completely melted and smooth. set aside.
  4. add both sugars to the melted chocolate mixture and stir to combine. add the eggs, yolk, and vanilla and stir until everything is combined. add the dry ingredients to this mixture and stir until everything is just barely combined.
  5. pour the batter into the prepared pan and bake it for about 30 minutes, until a toothpick inserted into the center comes out with just a few crumbs on it.
  6. let the brownies cool completely in the pan before removing and cutting them.
to make the marshmallow frosting
  1. in the bowl of a stand mixer fitted with the paddle attachment, beat the earth balance on medium speed until it is light and fluffy. add the marshmallow fluff and vanilla and beat until everything is smooth.
  2. with the mixer on low speed, add the powdered sugar. once it is incorporated, turn the mixer up to high speed and beat until the frosting is fluffy.
  3. transfer the frosting into a piping bag and set it aside so that you can clean the mixer to make the peanut butter frosting.
to make the peanut butter frosting
  1. again in the bowl of your stand mixer fitted with the paddle attachment, beat the earth balance and peanut butter on medium speed until they are combined and smooth. add the vanilla and beat to combine.
  2. with the mixer on low speed, add the powdered sugar and beat until it is incorporated. turn the mixer up to high speed and continue to beat until the frosting is light and fluffy, adding almond milk to thin it out if needed.
  3. transfer this frosting to another piping bag.
to put it all together
  1. when the brownies have cooled completely, lift them out of the pan and cut them into 36 tiny squares.
  2. take your two piping bags of frosting and cut open the tip of each bag. put both bags into a third bag fitted with a large open star tip, making sure that they are lined up evenly. you should now be able to pipe the frosting so that it comes out the tip half peanut butter and half marshmallow - you might want to practice on a piece of parchment paper before piping it onto the brownies.
  3. pipe a dollop of frosting onto each brownie bite.
