Strawberry Meringue Layer Cake Recipe



INGREDIENTS:

For the Chocolate Meringue
  • 6 Egg Whites
  • 8 ounces (250 grams) Sugar
  • 1 teaspoon White Wine Vinegar
  • 2 ounces (56 grams) Cocoa Powder
  • 1 teaspoon Vanilla
  • ¼ teaspoon Salt

For the White Meringues
  • 4 Egg Whites
  • 8 ounces (250 grams) Sugar
For the Filling and Topping
  • 600ml Double Cream
  • Few handfuls Fresh Strawberries, sliced length ways
  • Few tablespoons Strawberry Jam, warmed slightly 


INSTRUCTIONS:
  1. First, make the chocolate meringue. Preheat the oven to 150C or Gas Mark 2. 
  2. Place the egg whites and salt into the clean bowl of a standing mixer. Using the whisk attachment, whisk on high until the egg whites become stiff. 
  3. Add the sugar, a tablespoon at a time, while the whisk is still on, until the meringue becomes glossy and thick.
  4. Then, add in the cocoa powder, white wine vinegar and vanilla. Whisk until well combined.
  5. Line a large baking tray with parchment paper but do not grease it. Take a round 8 inch cake tin (as shown in photos), and place the meringue into it.
  6. Spread the meringue out and then lift off the cake tin.
  7. Bake the chocolate meringue for 1 hour until it’s crispy and cracked. Allow it to cool completely.
  8. Next, make the white meringues. Preheat the oven to 120C Fan or 140C or Gas Mark 1. 
  9. Line two trays with baking paper but do not grease them.
  10. Place the egg whites into the clean bowl of a standing mixer and whisk until stiff.
  11. Then, add the sugar, a tablespoon at a time, while the machine is still on. Whisk until the meringue is glossy and stiff.
  12. Using the same 8 inch cake tin round, divide the meringue between the two trays – as shown in photos.
  13. Bake in the oven for 1 and ¼ hours until crisp and dry. Leave to cool completely in the oven with the door slightly open.
  14. For the filling, whisk the double cream until soft peaks form. Add a little icing sugar and vanilla if you wish, to taste.
  15. Slice the strawberries and warm up the jam.
  16. To assemble, take a large plate or cake stand.
First, place on:
  1. the white meringue
  2. top with whipped cream
  3. followed by a layer of sliced strawberries
  4. a few drizzles of strawberry jam
  5. then the chocolate meringue
  6. top with whipped cream, strawberries and jam
  7. finally, the second white meringue
  8. pipe on the remainder of the whipped cream around the edges and the centre
  9. and decorate with the remaining strawberry slices!
  10. Serve immediately! Be sure to store this cake in the fridge as it has whipped cream on it.
