Yogurt Swirl Brownies With Raspberry Sauce Recipe



INGREDIENTS:
  • 1 c whole wheat flour (or all purpose)
  • 1/2 tsp salt
  • 1 & 1/4 c sugar
  • 1/3 c cocoa powder
  • 4 oz dark chocolate (I used 60%)
  • 3/4 c unsalted butter
  • 3 eggs
  • 1 tbsp vanilla extract
  • 3 oz plain Greek yogurt
  • 1 tsp vanilla extract
  • 1 tsp sugar
  • 1 c frozen raspberries
  • 1/4 c sugar
  • 1 tbsp cornstarch

INSTRUCTIONS:
  1. Preheat the oven to 350. Combine dry ingredients in a large bowl. Melt your chocolate bar in the microwave on 30 second intervals. Add butter to the chocolate and stir until melted. Combine wet mixture into the dry ingredients and beat in the eggs and 1 tbsp vanilla extract. Pour your batter into a 8 X 8 baking dish lined with parchment paper.
  2. Mix together your plain Greek yogurt, 1 tsp vanilla and 1 tsp sugar (or honey/vanilla flavored Greek yogurt). Drop it in dollops on top of the brownie batter and use a knife to swirl it around. Pop in oven. On the stove, combine frozen raspberries, cornstarch, and sugar and 1/4 c water and simmer on low until a sauce forms.
  3. Bake for ~30 minutes, but expect these brownies to still leave some residue if you stick it with a toothpick/knife because they are so fudgey and dense. Cut into 9-12 squares depending on how large you want them to be and serve immediately. Top with the warm raspberry sauce.
