Apple Crumble Cake Recipe


  • 2 medium sized apple, cut as thinly as you can and soaked in lemon juice to prevent the apples from browning
  • (enough for 2 cakes)
  • 85g flour
  • 2 tsp cinnamon60g unsalted butter
  • 50g muscavado sugar

Cake batter:
  • 1/8tsp salt
  • 140g self raising flour
  • 56g butter
  • 80g granulated sugar (100g of the original recipe)
  • 1 egg
  • ½ tsp vanilla extract
  • 80ml milk

Apple Crumble Cake Recipe

  1. Sift the flour and cinnamon into a bowl.
  2. Cut the butter into small cubes and put it into the flour and cinnamon bowl. Rub the butter into the flour mixture until it resembles breadcrumbs.
  3. Stir in the muscavado sugar.
  4. If not using straight away, keep it in fridge or put it into freezer bags to keep up to 3 months.

Cake batter:
  1. Preheat oven to 180C. Grease an 8” baking tin; either round or square.
  2. Sift the flour and add salt to the flour.
  3. In a separate bowl, cream butter and sugar until light and fluffy.
  4. Add in the egg and vanilla extract and beat the mixture until it is thoroughly combined.
  5. At this stage, if using the mixer, remove the bowl from the mixer and gently fold the mixture by hand using a spatula. Alternate with the dry and wet component. Add in 1/3 of the flour – add in ½ of the milk – add in remaining ½ of the flour – add in the rest of ½ of the milk – add in the rest of the flour.
  6. Pour the batter into your choice of shape of the 8” baking tin, sprinkle with half of the crumble topping (or as much as you like) and pop it into the preheated oven for 20 – 25 minutes.
  7. Test for when the cake is done: Poke the cake skewer right down the thickest part of the cake. In theory, the skewer should come out clean but because there is an apple jammy mixture between, you might get the sticky remnant. That is alright as long as it is not part of the cake batter.
  8. Remove from oven. Cool in pan for 5 minutes, then remove from pan to cool thoroughly.
