Dreamy, Creamy Chocolate Dessert Recipe


INGREDIENTS



Brownies:
  • 4 ounces unsweetened or dark chocolate
  • 3/4 cup butter, plus
  • 2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 cup flour
  • Chocolate Mousse Layer:
  • 8 ounces bittersweet chocolate, chopped fine
  • 2 tablespoons cocoa powder
  • 1 teaspoon instant espresso powder
  • 5 tablespoons water
  • 1 tablespoon brandy
  • 2 large eggs
  • 1 tablespoon sugar, divided
  • 1/4 teaspoon salt
  • 1 cup plus 2 tablespoons whipping cream
  • For the Whipped Cream Layer:
  • 1 pint heavy whipping cream
  • 1/3 cup granulated sugar
For Hot Fudge Layer:
  • 1 cup semi-sweet chocolate chips
  • 2 tablespoons butter
  • 1 can sweetened condensed milk
  • 2 tablespoons water
  • 1 teaspoon vanilla

INSTRUCTIONS:


For the Brownies:

  1. Preheat the oven foil. Grease to 350 degrees F. Line 15 x 10 glass baking dish with heavy duty aluminum foil with butter.
  2. In a double boiler over simmering water, melt the butter and dark chocolate.
  3. In a large bowl, break the eggs. Add the sugar and stir to combine. Add the vanilla and the melted chocolate mixture. Stir to combine. Stir in the flour and mix it completely.
  4. Carefully, pour the brownie batter in the prepared baking dish.
  5. Bake the brownies for 30 minutes. Try not to over bake them. The brownies will only be about 2-inches tall when baking is complete. Cool the brownies completely before assembling the rest of the dessert.

For the Mousse:
  1. In a double boiler over simmering water, melt chocolate, cocoa powder, espresso powder, water and brandy. Once melted, remove from heat.
  2. Separate eggs. Set egg whites aside. In a large bowl, whisk yolks with 2 teaspoons sugar and 1/4 teaspoon salt until combined and slightly thickened. Pour a little of the chocolate mixture into the egg yolk mixture. Whisk constantly. Add a little more chocolate and whisk.
  3. Add rest of chocolate mixture to the yolks. Set aside.
  4. In the clean dry bowl of a stand mixer, whisk egg whites until foamy. Add remaining teaspoon of sugar. Whisk whites until soft peaks form.
  5. Scoop 1/4 of egg whites into chocolate mixture and stir until combined. Add remaining egg whites and stir in a figure eight motion be sure to not over stir.
  6. In same stand mixer bowl, whip cream and remaining sugar.
  7. Fold whipped cream into chocolate mixture. Try not to over mix, but be sure to fold in all white portions. 
For the Whipped Cream Layer:
  1. Mix the sugar in the cream until combined. Continue to beat until soft peaks form.
Assemble:
  1. Spread the mouse over the top of the brownies. Carefully spread the whipped cream over the mousse, trying not to mix the mousse with the whipped cream. Refrigerate for at least 2 hours.
  2. Chocolate Sauce:
  3. In a medium saucepan, add all of the chocolate sauce ingredients. Cook over medium heat for 5 minutes. Allow to cool slightly before serving on the dessert.
To Serve:
  1. Cut the dessert into squares and place in a bowl or on a dessert plate. Drizzle chocolate sauce over each piece prior to serving.
