Tropical Paradise (Rum Coconut Macaroons) Recipe



INGREDIENTS:

  • 2 egg whites
  • 2 T. honey
  • ¼ salt
  • 1 t. vanilla extract
  • 1 T. dark rum
  • 2 c. unsweetened coconut
  • melted chocolate, optional

INSTRUCTIONS:
  1. First, toast the coconut until just browned. Let cool.
  2. In a large bowl, whisk egg whites and honey until frothy but NOT stiff. Add salt, vanilla, and rum. Fold in coconut. Place in square baking pan or baking squares.
  3. Bake at 325oF, for 15-20 minutes. 15 minutes yields a moist macaroon, so if you want them crunchier bake a bit longer. Drizzle with chocolate, if desired, and serve.
