Cookie Dough Stuffed Chocolate Cupcakes Recipe





INGREDIENTS:



for the cupcakes
  • 1 cup all-purpose flour
  • ⅓ cup unsweetened cocoa powder
  • ¼ cup granulated sugar
  • ½ cup packed light brown sugar
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ¾ cup almond milk
  • ½ cup canola oil
  • 1 teaspoon vanilla extract
  • 2 large eggs
for the cookie dough filling
  • ½ cup earth balance (or butter), at room temperature
  • ¼ cup granulated sugar
  • ½ cup packed light brown sugar
  • ¼ cup almond milk
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ⅓ cup chocolate chips
  • for the cookie dough buttercream frosting
  • ¾ cup earth balance (or butter), softened
  • 2 cups powdered sugar
  • 1 cup of the cookie dough filling

INSTRUCTIONS:
  1. first, make the cupcakes
  2. preheat the oven to 350 degrees F and line a muffin tin with cupcake liners.
  3. in a large bowl, stir together the flour, cocoa powder, sugars, baking soda, baking powder, and salt. add the almond milk, oil, vanilla, and eggs, and stir until everything is just barely combined. divide the batter among the cupcake liners so that they are about ⅔ full.
  4. bake the cupcakes in the oven for about 20 minutes, until a toothpick inserted into the center comes out clean. let the cupcakes cool completely on a wire rack before filling and frosting them.
  5. meanwhile, make the cookie dough filling
  6. in the bowl of a stand mixer fitted with the paddle attachment, beat the earth balance and sugars on medium speed until they are light and fluffy, 3-4 minutes. add the almond milk and vanilla and beat to combine.
  7. with the mixer on low speed, gradually add the flour and salt and mix until everything is combined. at this point, remove 1 cup of the cookie dough and set it aside - you'll put it in the frosting later. stir in the chocolate chips.
  8. then, make the frosting
  9. in the bowl of a stand mixer fitted with the paddle attachment, beat the earth balance on medium speed until it is light and fluffy, about 2 minutes. with the mixer on low speed, gradually add the powdered sugar, beating until it is completely incorporated and the mixture is smooth. add the cookie dough mixture and beat on medium speed until the frosting is smooth and fluffy, about 3 minutes.
  10. then, put it all together
  11. once the cupcakes are completely cool, use a small spoon or a paring knife to cut a hole out of the center of each one. drop about a tablespoon (depending on the size of your holes) into each cupcake, then re-top the cupcakes with the top of the hole you cut out before.
  12. pipe (or spread) a healthy portion of the frosting on the top of each cupcake, and sprinkle them with some extra chocolate chips.
