S’mores Cookies Recipe



INGREDIENTS:
  • 12 marshmallows
  • 1½ cups all purpose flour
  • 1 cup graham cracker crumbs
  • 2 tsp cornstarch
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup unsalted butter, melted
  • ¾ cup brown sugar
  • ⅓ cup white sugar
  • 1 tsp vanilla
  • 1 egg
  • 1 egg yolk
  • 2 cups milk chocolate chips, divided

S’mores Cookies Recipe

INSTRUCTIONS:
  1. Preheat oven to 350. Cut marshmallows in half with kitchen scissors. Set aside.
  2. In medium bowl, whisk together flour, graham cracker crumbs, cornstarch, baking soda, and salt. Set aside.
  3. In a large bowl, beat melted butter, brown sugar and white sugar. Add vanilla. Add whole egg. Beat well. Add egg yolk. Beat well. Gradually beat in flour mixture until just combined. Stir in 1 ½ cups chocolate chips.
  4. Scoop dough into 2 Tbsp. balls . Place two inches apart on ungreased baking sheets. Bake for 10 minutes. Remove from oven. Turn on broiler. Place marshmallows cut side down on cookies. Place under broiler for 1-2 minutes until marshmallows are golden brown. Watch closely so they don’t burn. Remove from oven. Let cool for 3 minutes on pans. Remove to wire racks to cool completely.
  5. In small bowl, melt ½ cup chocolate chips. Carefully pour melted chocolate into plastic sandwich bag. Snip small corner off of bag. Squeeze chocolate onto cookies. Let cool.
