Dark Chocolate Coconut Truffles Recipe




INGREDIENTS:
  • 1 cup almonds (raw or roasted and salted)
  • 1 3/4 cup powdered sugar (sifted)
  • 1 3/4 cup flaked unsweetened coconut
  • 1/2 cup sweetened condensed milk
  • 2 cup (12 oz.) dark chocolate chips
  • 1 tablespoon milk or cream (optional)

INSTRUCTIONS:
  1. In a food processor, puree almonds until mixture becomes fine.
  2. In a large bowl, combine the almond puree, powdered sugar, coconut, and condensed milk. Use hands to mix until well incorporated.
  3. Shape mixture into small 1” balls. Cover and place in the refrigerator; chill until firm, about 30 minutes.
  4. In a double-boiler, melt chocolate chips. Add milk to thin mixture, if necessary (I didn’t and my truffles turned out just fine).
  5. Dip balls into melted chocolate. Sprinkle each ball with a little shredded coconut. Place on waxed paper.
  6. Chill until set. Store in an airtight container.
