Drunk Prune Cheesecake Recipe


Drunk Prunes —-> One day before baking!
  • 100g prunes
  • rum to sink the prunes :)

Bottom Ingredients (form 18cm):
  • 100g biscuits
  • 2 Tbs butter
  • 8 pieces of dark chocolate

Cheese Mass Ingredients:
  • 300g cream cheese
  • 2 eggs
  • 50g sugar
  • rum left from Drunk Prunes

  • 75g dark chocolate
  • 50ml heavy cream

Drunk Prune Cheesecake Recipe


Drunk Prunes 
  1. Chop the prunes and pour them with rum so that they’re almost completely covered with alcohol :)
  2. Boil it and leave aside for cooling.
  3. Then leave in the fridge overnight.
  4. The next day, before baking, drain the prunes on the sieve.
  5. Alcohol left can be added to cheese mass :)

Bottom (form 18cm):
  1. Line the bottom of the form with baking paper.
  2. Blend the biscuits to sand-like consistency.
  3. Melt chocolate with butter and add it to the biscuits.
  4. Blend again so that the mass is more sticky :)
  5. But the mass on the bottom of the form. Press gently a bit using your fingers or a spoon.
  6. Leave in the fridge and… prepare the cheese mass :)

Cheese Mass:
  1. Mix the cheese for a moment.
  2. Whip the eggs with sugar for a moment.
  3. It may take a while because we want to get a smooth and fluffy mass which will probbaly double its size while whipping :)
  4. Start adding cheese in two or three turns, mixing shortly after each adding.
  5. If we have any rum left after sinking our prunes, add it to the mass and mix shortly once again.
  6. Pour the mass on the cooled biscuit bottom and smooth it a bit.
  7. Put the prunes on the mass and press them gently in.
  8. Bake at 150°C for about 60 minutes.
  9. Chill ajar.

  1. Chop the chocolate.
  2. Heat up the heavy cream till the boiling moment.
  3. Do not boil it!
  4. Add chocolate and leave for a half a minute.
  5. After this time, stir it to get a smooth chocolate glazing… and pour the cake
