Lemon & Thyme Yogurt Cake Recipe





INGREDIENTS:
  • 2 eggs
  • 1 cup caster sugar
  • juice of 1 lemon
  • zest of 1 lemon – grated
  • 1 tsp vanilla extract
  • 280g plain flour
  • 3 tsp baking powder
  • 1 cup Greek yogurt
  • 1/2 cup olive oil
  • 2 tbs (more for decoration) thyme leaves only

INSTRUCTIONS:

  1. Preheat oven to 180°C.
  2. Whisk together eggs and sugar until pale and creamy.
  3. Beat in lemon’s juice, zest and vanilla extract.
  4. Sift together flour and baking powder in another mixing bowl.
  5. Fold sifted powder into egg mixture.
  6. Mix in Greek yogurt then olive oil.
  7. Stir in thyme leaves.
  8. Pour batter into lightly greased baking pan.
  9. Sprinkle some more thyme leaves for decorative purpose.
  10. Bake at 180°C for about 45 mins or until done. Check for doneness by inserting a toothpick in the middle, should come out clean if done.
  11. Leave to cool.
